How to make the perfect pancakes this year
There’s nothing quite like the smell of freshly made pancakes wafting through the kitchen. Whether you’re cooking for yourself or sharing with loved ones, a stack of golden fluffy pancakes is the perfect way to start the day. Making the perfect pancake isn’t just about flipping them at the right time – it's about getting the balance of ingredients just right to create that light, airy texture that everyone loves.
With a few simple steps, you can easily master this classic treat. Here’s how to make the perfect pancakes, every time.
Ingredients
-135g plain flour
-1 tsp baking powder
-½ tsp salt
-2 tbsp caster sugar
-130ml milk
-1 large egg
-2 tbsp melted butter
-1 tsp vanilla extract
Method
- In a bowl, combine the flour, sugar, baking powder and salt. Give it a good whisk to make sure everything's whisked!
- In another bowl, beat the egg and then add the milk and melted butter (or oil). If you’re adding vanilla extract, this is the time!
- Pour the wet ingredients into the dry. Stir gently until just combined. It’s OK if the batter is a little lumpy – don't over-mix it or your pancakes might be tough.
- Place a non-stick frying pan or griddle over medium heat. When hot, ladle in the batter to form small circles.
- Once bubbles appear on the surface (about 2-3 minutes), flip your pancakes and cook for another 1-2 minutes until golden brown.
- Stack them high on a plate, add your favourite toppings and enjoy!
Four-Step Secrets
- Watch the heat
One of the most common mistakes people make when preparing pancakes is having the heat up too high. This is the most common cause of ‘throwing out the first pancake’. You should have even, fairly low heat for a consistent cook.
2. Don’t over-mix!
A mistake made by many; remember you only need to mix the batter until it just comes together. Don’t let Instagram fool you, lumps are okay! Overmixing will lead to tough, chewy pancakes and no-one wants that.
3. Don’t use cooking fat
This is the real secret to the technique. If you want the perfect edge to edge golden brown tops and bottoms on your pancakes, then leave the pan totally dry. No butter, no cooking oil, no nothing! It can feel scary, but this should work no matter what type of pan you’re using.
4. Look for set bubbles on the edges
This is the best trick to let you know when the pancake is ready for flipping. If you have your heat set properly, this should never fail! Once the bubbles on the edges pop, and don’t fill back in with liquid batter, you can be certain it’s ready to flip.
Whether for pancake day, breakfast or a cosy treat – this simple recipe guarantees delicious results every time.
